The God of All Puddings

I decided to share my favourite recipe for chocolate fondant pots, so if you're not interested, you can skip this and not miss much. ^_^ I think the original recipe is from Waitrose, but I lost the actual link.

Seriously, if you're even vaguely chocolate-oriented, then this is the recipe for you. It makes six pots, and they're reheatable, so if you don't have six people in your kitchen at the same time, then that's good, too. :D

150g (~5.3 oz) butter, vaguely chopped
25g (~1oz) cocoa powder, plus extra for dusting ramekins/moulds/whatever you choose to enshrine this fantastic pud
200g (~7oz) dark chocolate, broken up
2 eggs, plus 2 egg yolks
125g (~4.5 oz) caster sugar
25g (~1oz) plain flour

1) Preheat the oven to 180^C/gas mark 4. Grease the ramekins with butter and dust with cocoa (I mixed in a little cinnamon, too. Nice, but not essential.)

2) Melt the butter and chocolate together in a water bath, stirring every now and then until smoothly mixed. Place aside to cool.

3)Use an electric whisk for this bit. Beat the eggs, yolks and sugar in a fairl large bowl (you'll be pouring the chocolate mix into here later on) for five minutes until it's really thick and creamy/foamy. Whisk in the cooled chocolate/butter mix, and then sieve in the flour and remaining cocoa and fold in. If you've beaten the eggs properly, you should be able to hear the air hissing whenever you move the mixture around.

4)Divide the mixture between the ramekins and bake for 14-16 minutes. 14 minutes is about the minimum time if you want the outside to be hard and the inside to be really gooey (my favourite), but you can leave them in a bit longer to get the centre a little more spongy (Mum's favourite). Enjoy!

(To reheat the pots, get the oven onto about 180^C, and leave the ramekins in for about 5 minutes.)
